Wagyu Blue Cheeseburger

INGREDIENTS

1.5 lbs ground Wagyu beef

1.5 tsp kosher salt

½ tsp black pepper

4 brioche burger buns

6 oz blue cheese (crumbled)

1 large yellow onion (thinly sliced)

2 tbsp butter (plus extra for toasting buns)

2 tbsp olive oil

2 cups arugula 

4 slices thick-cut bacon (optional) 

INSTRUCTIONS

Caramelize the Onions: Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a skillet over medium heat. Add the sliced onions and a pinch of salt. Cook slowly for 40 to 50 minutes, stirring occasionally until deep golden brown and tender. Set aside. 

Cook the Bacon: If using bacon, cook it in a skillet until crispy, then set aside on a paper towel.

Form the Patties: Divide the Wagyu beef into 4 equal portions. Gently shape them into patties about 1 inch thick. Press a small divot in the center of each patty to prevent them from puffing up while cooking. Season both sides generously with salt and pepper. 

Sear the Burgers: Heat a cast-iron skillet or grill over high heat. Cook the Wagyu patties for about 3 to 4 minutes without moving or pressing down on them. Flip the patties.

Melt the Cheese: Cook for another 3 to 4 minutes for medium-rare. During the final minute of cooking, top each patty with a generous amount of blue cheese and cover the pan or close the lid to melt the cheese. Remove and let rest for 5 minutes. 

Toast the Buns: Butter the cut sides of the brioche buns and toast them in the skillet until golden brown. 

Assemble: Place arugula on the bottom bun, add the Wagyu patty with melted blue cheese, top with caramelized onions and crispy bacon, then finish with the top bun.
